  • 2 large eggs (room temperature)
  • 1 teaspoon vanilla extract

  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • Optional: ½ cup chopped walnuts or pecans
  • Optional: ½ cup dark chocolate chips
  • Optional: swirl of peanut butter or almond butter

Instructions

  1. Preheat oven to 350°F (175°C) and grease or line a loaf pan with parchment paper.
  2. Mash bananas thoroughly in a large bowl until smooth.
  3. In a blender, process the cottage cheese until creamy and smooth.
  4. In a separate bowl, mix mashed bananas, blended cottage cheese, eggs, and vanilla until well combined.
  5. In another bowl, whisk together flour, baking soda, and salt.
  6. Gently fold dry ingredients into the wet mixture until just combined—do not overmix.
  7. Fold in any optional add-ins like nuts, chocolate chips, or nut butter.
  8. Pour the batter into the prepared loaf pan and smooth the top.
  9. Bake for 50–60 minutes or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
  10. Let the bread cool completely in the pan before slicing and serving.

Notes

Use room temperature ingredients and don’t overmix the batter for best texture. Let it cool fully to avoid gummy slices. This bread freezes well—slice before freezing for quick grab-and-go breakfasts.
