  • 6 large eggs
  • 1 cup cottage cheese (full-fat or low-fat)
  • 1/4 cup milk or cream
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup shredded cheddar or Swiss cheese (optional)
  • 1 cup chopped spinach or kale (optional)
  • 1/2 cup chopped onions or scallions (optional)
  • 1/2 cup cooked sausage or turkey bacon (optional)
  • 1/2 cup chopped peppers, mushrooms, or zucchini (optional)
  • 1/2 cup sliced tortilla strips (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Whisk eggs until airy.
  3. Fold in cottage cheese and milk or cream.
  4. Stir in optional chopped spinach, veggies or extras as desired.
  5. Season with salt and pepper.
  6. Pour mixture into a greased 8×8 or 9×9 baking dish.
  7. Top with shredded cheese if using.
  8. Bake for 30–40 minutes, until center is just set.
  9. Let cool for 5–10 minutes before slicing and serving.

Notes

Avoid overmixing. Grease your dish well. For variation, try adding green chiles, taco seasoning, or top with salsa. Reheats beautifully for easy leftovers.
