  • ½ teaspoon paprika or taco seasoning (for roasting)
  • 1 tablespoon tomato paste
  • 1 teaspoon garlic powder
  • ½ cup low-fat cottage cheese
  • 1 ripe avocado, sliced
  • Optional toppings: scallions, sesame seeds, fried egg

Instructions

  1. Preheat oven to 425°F. Toss chopped sweet potatoes with olive oil, salt, pepper, and paprika. Spread on a sheet pan and roast for 30–40 minutes, flipping halfway.
  2. Heat a skillet over medium-high. Add ground beef and cook, letting it brown undisturbed for a few minutes before breaking it up. Stir in tomato paste, garlic powder, and taco seasoning. Cook until well browned and flavorful.
  3. In a small bowl, mix honey with chili flakes or sriracha. Microwave for 10–15 seconds to loosen. Adjust heat to taste.
  4. Build the bowls: Start with roasted sweet potatoes, add seasoned beef, spoon on cottage cheese, top with avocado slices, and drizzle hot honey over everything.
  5. Garnish with scallions, sesame seeds, or a fried egg for bonus flavor and texture.
